Ingredients:
  • 1 ½ pounds chicken breasts, boneless and skinless (1-inch thick)
  • Salt and pepper to season (about ¼ teaspoon salt and ⅛ teaspoon pepper per breast)
  • 2 tablespoons avocado oil
  • About ½ cup bone broth

Instructions:
  1. Pat the chicken dry and season generously on both sides with salt and pepper.
  2. Heat avocado oil in a large stainless steel or cast iron skillet over medium-high heat.
  3. Sear: Add the chicken breasts to the skillet (do not overcrowd). Cook, undisturbed, for 7 minutes to allow a golden crust to form.
  4. Flip: Once the chicken releases easily, flip the breasts. Cook for another 5 to 7 minutes.
  5. Deglaze: Lower the heat to medium. Add ¼ cup of chicken broth, scraping up any chicken bits from the pan. Add the remaining ¼ cup broth to cover the bottom of the pan.
  6. Reduce: Allow the sauce to reduce until it is a thin glaze, tossing the chicken in the sauce for another 3 to 5 minutes.
  7. Rest: Remove from skillet and allow to rest for 5 minutes before slicing.
  8. Serve with the pan sauce and ENJOY!

Nots:

  • Thickness: Cook time is for 1-inch thick breasts. Use a meat thermometer to ensure an internal temperature of 165°F.
  • Meal Prep: Cooked chicken lasts in the fridge for 4 days or in the freezer for up to 4 months.
