Fried Turkey by RickMach

Ingredients:
Rub - 1 turkey:
  • 1 T smoked paprika
  • 1 T salt
  • 1 1/2 t garlic powder
  • 1 1/2 t onion powder
  • 1 1/2 t black pepper
  • 1 t cayenne pepper
  • 1 t dried thyme

Injection: - 1/2 oz per 5 lbs (or more)
  • 12 oz light beer
  • 2 T Worchestershire sauce
  • 2 T honey
  • 5-6 drops hot sauce
  • 1 t coarse Kosher salt

Instructions:
  • Wash and dry the turkey the day before
  • Rub the turkey with the spice mixture, cover and refrigerate overnight.
  • Heat about 4 gallons of oil (prefer peanut) to 350F
  • Cook until the thigh meat is 180
  • Cook until breast is 155 -- will reach 165 while resting.
  • Cook time is about 3 - 3 1/2 minutes per pound
  • Let rest 20 minutes before carving
