Ingredients:
Rub - 1 turkey:
1 T smoked paprika
1 T salt
1 1/2 t garlic powder
1 1/2 t onion powder
1 1/2 t black pepper
1 t cayenne pepper
1 t dried thyme
Injection: - 1/2 oz per 5 lbs (or more)
12 oz light beer
2 T Worchestershire sauce
2 T honey
5-6 drops hot sauce
1 t coarse Kosher salt
Instructions:
Wash and dry the turkey the day before
Rub the turkey with the spice mixture, cover and refrigerate overnight.
Heat about 4 gallons of oil (prefer peanut) to 350F
Cook until the thigh meat is 180
Cook until breast is 155 -- will reach 165 while resting.
Cook time is about 3 - 3 1/2 minutes per pound
Let rest 20 minutes before carving
