Overnight Chia Oatmeal by RickMach
Ingredients:
Full container:
- 1 quart almond milk (unsweetened)
- 2 cups uncooked oats
- 2 cups Greek yogurt
- 8 heaping tablespoons chia seeds
- 3-4 Tablespoons sweetener (honey, maple syrup, agave)
- 1 Tablespoon vanilla
- 1/2 Tablespoon coconut extract or other flavorings
- Alternate flavorings: 1/2 Tablespoon vanilla, 1/2 Tablespoon Almond, 1/2 teaspoon coconut extract
Original Single Serving:
- 1/2 cup milk or almond milk (unsweetened)
- 1/4 cup oats
- 1/4 cup Greek yogurt
- 1 tablespoon of chia seeds
- 1-2 teaspoons of honey or maple syrup or agave
- 1/2 teaspoon vanilla or cinnamon or whatever flavoring
Instructions:
Mix all the ingredients and let them sit overnight. Mix in fresh fruit and serve.

You can vary the flavors and fruit of your choice to make it more like apple pie (applesauce, chopped apple, pecans) or peach crisp (peaches/granola).
