Large Batch to use a pound (whole tube) of breakfast sausage.
Servings: Approximately 24-36 egg bites (depending on how full you fill the muffin tins).
Ingredients:
2 cups bacon bits cooked or cooked sausage
19 large eggs
2 2/3 cups cottage cheese
2 2/3 cups Colby jack cheese, shredded
2/3 tsp salt (See note below)
2/3 tsp black pepper
cooking oil spray
Salt: Bacon and sausage can be very salty. The original recipe used much less meat. You may want to start with $\frac{1}{2}$ tsp of salt, and only add more if you know your meat isn't overly salty.
Instructions:
Preheat oven to $325^\circ F$.
In a large mixing bowl, crack and whisk the eggs.
Add in the bacon or sausage, cottage cheese, shredded cheese, salt, and pepper. Mix to combine thoroughly.
Spray your muffin pans well with cooking oil.
Equally distribute the egg mixture among the muffin cups (approximately 32 cups).
Place a pan of water on the lower rack of the oven. This creates steam and helps the egg bites cook evenly.
Place the egg bites on the upper rack of the oven and bake for 23-28 minutes. Note: With a larger batch, the cooking time might be slightly longer.*
Use a toothpick to check for doneness. A toothpick should come out clean.
Let the egg bites cool for a couple of minutes before removing them from the muffin pan.

Baking Time: Ovens can vary, and having multiple pans in at once can affect heat circulation. It's a good idea to start checking for doneness at the 23-minute mark, but be prepared for it to take a few minutes longer than the original recipe.
